The authors of Summer Heat also put together a cookbook with recipes from our stories and some of our favorites-so cool! I have two recipes in the cookbook. Banana Dessert, from The Fall, by Jennifer Lowery.
I love cooking almost as much as I love writing. Almost. Writing is definitely my passion, but cooking can be fun sometimes too. I often include cooking scenes in my writing and it is usually the hero that is doing the cooking. Hmm…wonder why that is, lol. Probably because I don’t have the time anymore!
In The Fall-the second book in my ATCOM series- while my hero, Brendan Devayne, is grilling steaks my heroine, Mia, is busy making her own recipe for Banana Dessert, a favorite of her son’s. Needless to say this dessert quickly becomes Brendan’s favorite, too. So, here’s the recipe for Mia’s Banana Dessert. Enjoy!
Makes 12 servings
2 cups all-purpose flour, preferably unbleached
2 sticks butter
1 cup chopped macadamia nuts
2 8-oz cream cheese, softened
2 cups powdered sugar
2 small packages instant banana pudding
3 cups cold milk
16-oz Cool Whip®
1. In a medium bowl, melt butter in microwave.
2. Mix in flour and nuts and press into a 9×13 pan.
3. Bake at 375° for 15 minutes; Cool.
4. In mixing bowl, cream together cream cheese and powdered sugar. Spread over cooled crust.
5. In a large bowl, whisk pudding mix and milk until thickened. Pour over cream cheese layer.
6. Spread Cool Whip® over top.
7. Refrigerate until ready to eat and store leftovers, covered, in the refrigerator.
Gardening Tip: Ideal pH for growing good quality banana is 6.5. As like most of the fruit bearing plants, Banana also requires a good amount of water and full sunlight. Experts suggest a place where 12 hours of sunlight is available. Please make note of this while planting the plant.
